Having done several types of iterations of this for my cars over the years, I can tell you that unless you're car is sitting still, this is the most frustrating way of controlling your car's media.
Glancing toward the tiny icons as you try to focus on the road proves to be taxing. Then you have to try and hit the things while driving. Your finger has to hit square on the icon for it to launch and if during the "touch" your finger moves even a little, the menu thinks you want to do that "sweep" thing and does it. It can take several hits before you get a launch of the program. In addition, if your fingers are like mine (have some calluses), the iPad/iPhone won't always pick up it's heat signature. So it'll act like you never touched it. I now have the touchscreen Ford Navigation in my car in conjunction with my iPhone, and I still use the hardware buttons on the Ford Nav more than anything else. I think the Sync System is actually superior in this regard. The iPad/iPhone is great when it works, but it doesn't really work (perfectly) often in this set up. What it needs is a voice-command system, or larger icons. That being said...someone buy me an iPad so I can do this
